Curriculum

Science and Our Food Supply: Investigating Food Safety from Farm to Table is a free curriculum kit appropriate for middle level and high school classes. This inquiry-based curriculum, developed jointly by the FDA and NSTA, introduces students to the fundamentals of microbiology through in-depth lessons and activities that are arranged in an easy-to-use, modular format. The curriculum can easily be incorporated into your biology, life science, food, health and nutrition classes. Your students will learn about

The curriculum contains several useful components: separate guides for middle level and high school teachers; an interactive DVD & flashdrive, "Dr. X and the Quest for Food Safety"; and the comprehensive "Food Safety A to Z Reference Guide." This curriculum includes varied activities which are easy to incorporate into any program, insider interviews with food scientists, and a career guide.

A new component to this curriculum, Science and Our Food Supply: Using the Nutrition Facts Label to Make Healthy Choices, is now available online. This nutrition-based curriculum introduces students to the fundamentals of healthy food choices, using the Nutrition Facts Label as the starting point, and may be used separately or in conjunction with the original curriculum. With engaging hands-on activities, students will become aware of calories, serving size, and the nutrients to get “more of” and “less of.” Designed for use by middle level teachers, the emphasis is on an inquiry approach that is customizable to science, health, and/or family and consumer science classes, aligning with current education standards in these curriculum areas.
